There are three trends in Japanese pasta. One is the development of traditional Italian pasta, the second is well-fried pasta called "romespa", and the third is mixed pasta with cod roe or sea urchin. Born in Tokyo, UNETTO introduced Los Angeles to Japanese-style pasta, which has formed a unique culinary culture.
